Hereford Chili Soup

Ingredients:

  • 1 kg Hereford beef, 90/10
  • 4 oz canned tomatoes (400g)
  • 2 oz canned beans (400g)
  • 500 ml bone broth
  • 1 large carrot
  • 2 bell peppers
  • 2 onions
  • 6 garlic cloves
  • 4 tablespoons tomato paste
  • 50g chipotle peppers
  • Hot sauce
  • Salt, sugar, pepper

Preparation:

  1. In a pot, sauté chopped onions and grated carrots.
  2. Once the onions become translucent, add ground beef.
  3. Sauté and add canned tomatoes, tomato paste, finely chopped bell peppers.
  4. Cook it all together and then add beans, broth, salt, pepper, and sugar.
  5. Press garlic cloves through a garlic press.
  6. Adjust the taste by adding chipotle peppers and hot sauce.
  7. Simmer for approximately 20 minutes.

Serve with Greek yogurt, Parmesan cheese, and herbs.

It's preferable to serve with toasted bread or corn tortilla chips.
